In Europe and Russia, it appeared relatively recently - in the 16th century, the Spaniards brought it from Mexico, where pumpkins have been grown for thousands of years. About what exactly pumpkin is useful for, whom it can harm, as well as recipes for unusual PP-dishes from pumpkin - in our material, which was prepared by surgeon Svetlana Levchenko (Institute of General and Emergency Surgery named after V.T. Zaitsev of the National Academy of Medical Sciences of Ukraine) .

Composition and calorie content of pumpkin

Pumpkin is the richest source of healthy dietary fiber, in particular, soluble fiber - pectin. Due to the large amount of fibers, the pumpkin saturates for a long time.

Pumpkin is also a valuable source of carotene (there is more of it here than in carrots), vitamins B1, B2, C, E, K, T (carnitine), PP. There are a lot of pumpkin pulp and minerals - potassium and calcium, iron and phosphorus. There is also sugar in the pumpkin, but at the same time its calorie content is low and amounts to 22-25 kcal depending on the variety.

100 g of raw pumpkin pulp contains:

  • 1 g of protein;
  • 0.1 g fat;
  • 4.4 g carbohydrates.

The benefits of pumpkin

Dietary fiber stimulates peristalsis, serves as a nutrient medium for beneficial intestinal bacteria involved in digestion. In addition, fiber reduces "bad" cholesterol. Thus, pumpkin contributes to healthy digestion, maintenance of normal body weight and serves as a prevention of atherosclerosis.

Vitamin PP in combination with vitamin C strengthens the walls of blood vessels. Potassium and calcium are essential for the health of the nervous system and muscle contractions.

Carotene is a precursor of vitamin A, one of the most important vitamins for vision and skin. Also, vitamin C is useful for the skin, which is involved in the production of collagen, a protein that provides elasticity and youthfulness of the skin. Vitamins A, C and E are also antioxidants, that is, they neutralize oxidative stress - one of the main causes of aging and cell death.

Vitamins of group B, as well as phosphorus, have a beneficial effect on the nervous system, help relieve fatigue, irritability, and normalize sleep.

Harm of pumpkin

Pumpkin is an extremely useful vegetable, but there are several diseases in which its use should be limited or completely eliminated.

In case of diabetes mellitus pumpkin should be consumed with caution - it contains quite a lot of sugar.

For gastritis and inflammatory bowel disease dishes from raw pumpkin are categorically contraindicated, you can eat a thermally processed vegetable, but little by little and infrequently.

When flatulence it is better to refuse pumpkin - it increases gas formation in the intestines.

In case of cholecystitis and gallbladder stones it is not recommended to eat pumpkin because of its choleretic action.

Pumpkin is a product that rarely causes allergies, but even it can cause individual intolerance - in this case, eating a vegetable will also have to be abandoned.

A few words about pumpkin seeds

Pumpkin has tasty and healthy not only pulp, but also seeds. Pumpkin seeds are a valuable source of zinc, a trace element that has a beneficial effect on the skin. Zinc contributes to the regulation of sebum production, that is, it helps to normalize the oiliness of the skin and serves as a prevention of inflammation. In addition, zinc is one of the most important trace elements for the male reproductive system, it stimulates spermatogenesis and has a beneficial effect on the functioning of the prostate gland. Also, pumpkin seeds are rich in fiber, contain vitamins B and E, phosphorus, magnesium, fats that are useful for liver cells.

Also in the pumpkin seed, or rather, in their dark olive shell, which separates the seed from the peel, contains a unique substance - cucurbitin. Absolutely safe for humans, it has a paralyzing effect on intestinal parasites, so pumpkin seeds were considered in folk medicine to be quite an effective anthelmintic - today, of course, preference should be given to drugs with proven effectiveness and used only as prescribed by a doctor.

Use of gourd in medicine

Adding pumpkin to the diet can be beneficial for many diseases:

  • obesity and metabolic syndrome;
  • atherosclerosis;
  • hypertension;
  • decreased visual acuity;
  • colds;
  • anemia;
  • varicose veins;
  • decreased blood clotting;
  • dermatitis, acne;
  • toxicosis of pregnant women;
  • liver diseases;
  • reduced potency;
  • helminthic infestations.

Pumpkin is also used in cosmetology as a basis for masks and tonics. Vitamins A and E soften the skin (although they are still more effective when eaten - once in the body, they work as antioxidants that protect the skin from oxidative stress and premature aging). Ascorbic acid has a mild exfoliating, mattifying and whitening effect. Zinc helps fight acne.

How to choose a pumpkin and how to store it

There are many varieties of pumpkin, but all of them can be combined into three main groups:

Muscat is the sweetest pumpkin, its fruits are elongated, often pear-shaped, the peel is quite thin and can be easily cut with a knife. Butternut squash is the best for desserts and sweet cereals, as well as for salads. During storage, butternut squash gradually loses its sweetness.

Large-fruited is the same “classic” round, slightly flattened pumpkin at the poles, which is customary to decorate houses on Halloween. Usually such a pumpkin is bright orange, but there are varieties with yellow, almost red, green, brown and even blue fruits. The taste qualities of such pumpkins depend on the variety - there are mainly decorative varieties with almost tasteless grassy pulp, and there are quite sweet varieties. Most large-fruited pumpkins have large and tasty seeds. Unlike nutmeg pumpkins, large-fruited pumpkins, on the contrary, gradually become sweeter during storage - the starch in them turns into sugar.

Hardbark is a medium-sized pumpkin, oval in shape, with a very dense skin. The least sweet type of pumpkin, optimal for cooking second courses, meat casseroles, meatballs, not sweet soups and cereals. Raw such a pumpkin is not eaten because of too dense pulp. Hard-shelled pumpkins have the tastiest seeds, and there are even varieties with bare, skinless seeds.

Ornamental gourds also exist, but they are not eaten.

The best pumpkin - with a dense skin, without damage, the stalk should be dry and firm. The color of the peel depends on the variety and does not affect the taste, but the flesh should be rich yellow or orange, the brighter it is, the more beta-carotene it contains. It is better to take pumpkins no more than 3-5 kg ​​in weight, larger fruits may turn out to be tasteless, dry and with too dense and thick skin. You should not buy a pumpkin cut in a store - there is no certainty that the vegetable was cut in compliance with sanitary and hygienic standards. It is better to buy a whole pumpkin, and if there is excess pulp left, freeze it by cutting it into slices or cubes.

An uncut pumpkin can be stored in a room for 1-2 months. On an insulated balcony or in a cellar, it will lie perfectly until spring. The cut fruit can be stored in the refrigerator for up to a week and a half, and in the freezer for up to six months.

Pumpkin is an almost universal vegetable, it is eaten both raw and after heat treatment: boiling, baking, frying. Roasting maximizes the taste and smell of pumpkin - this must be taken into account. Soups, pancakes, casseroles, caviar, porridge, all kinds of salads and desserts are prepared from pumpkin.

At the same time, doctors recommend adhering to the following rules for eating pumpkin dishes:

  • Fat should be included in the pumpkin dish - salad should be seasoned with sour cream, porridge boiled in milk, and casserole cooked in vegetable oil. Fat aids in the absorption of beta-carotene;
  • It is better not to abuse raw pumpkin, and if there are diseases of the gastrointestinal tract, it should be abandoned altogether, replacing the raw vegetable with baked or boiled. The coarse fibers in pumpkin pulp irritate the stomach and intestines;
  • Butternut squash recipes (such as butternuts) do not require any additional sugar – the squash itself is quite sweet, and baking it only enhances the sweetness. If you want to make porridge or dessert even sweeter, just add half a teaspoon of honey to the finished dish or sprinkle it with maple syrup.

An original dish that can serve as an excellent substitute for the usual cheesecakes. These muffins are delicious both hot and cold, with sour cream, honey, condensed milk or without additives. This is a great option for breakfast or dinner.

What you need:

  • nutmeg pumpkin - 400g;
  • cottage cheese (fat content 5%) - 400g;
  • 2 eggs;
  • kefir (any fat content) - 100 ml;
  • soda - ¼ tsp;
  • spices (orange peel, ginger, cardamom, cinnamon) - to taste;
  • sugar - to taste;
  • nuts, raisins, dried fruits - to taste;
  • ground oatmeal - as needed;
  • oil for greasing molds.

How to cook:

  1. Mix kefir and soda warmed up to room temperature, let stand for a quarter of an hour.
  2. Grind raw pumpkin on a grater or in a food processor.
  3. Mash cottage cheese with a fork, mix with pumpkin pulp, pour in kefir and soda and mix so that the mass is homogeneous. Beat eggs.
  4. Add spices, sugar.
  5. The mass should be thick, if it turned out to be too thin, you can add a tablespoon of ground oatmeal.
  6. If desired, crushed nuts or dried fruits can be added to the dough.
  7. Grease muffin tins (silicone, paper or metal) with oil, fill them 2/3 full with batter.
  8. Bake muffins in an oven preheated to 180°C for about half an hour.

Chicken and pumpkin casserole

Pumpkin is not only the basis for desserts and sweet porridge, but also a wonderful meat companion. Delicious and healthy pumpkin and chicken casserole will be a great lunch or dinner for the whole family.

What you need:

  • hard-barked pumpkin - 700 g;
  • chicken fillet - 500 g;
  • sour cream (any fat content) - 3 tablespoons;
  • 2 eggs;
  • mozzarella - 150 g;
  • salt, pepper, spices for chicken - to taste;
  • breadcrumbs - 2-3 tablespoons;
  • vegetable oil for greasing the mold.

How to cook:

  1. Cut the chicken and pumpkin into cubes of the same size, season with spices, leave to marinate for half an hour.
  2. Whisk sour cream and eggs until smooth, season with salt and pepper.
  3. Grease a glass or ceramic dish with oil and sprinkle with breadcrumbs.
  4. Put the chicken and pumpkin in a mold, pour over the egg-sour cream mixture.
  5. Bake for 40-60 minutes in an oven preheated to 180°C.
  6. 10-15 minutes before cooking, sprinkle the casserole with grated mozzarella

Orange Mood Salad

Bright and crispy pumpkin and carrot salad can be an excellent independent dish - for example, for an afternoon snack, or as a side dish for a main meat dish. You can diversify the basic salad by adding an apple, stalk celery, cabbage, sweet salad onion or garlic, and bell pepper to it.

What you need:

  • sweet butternut squash - 250 g;
  • 1 carrot;
  • pumpkin seeds or any nuts - 30 g;
  • vegetable oil (any to taste) - 1 tablespoon;
  • lemon juice - 2 tablespoons;
  • salt, pepper - to taste.

How to cook:

  1. Grate carrots and pumpkin.
  2. Season with salt and pepper, lemon juice and vegetable oil.
  3. Let stand for 10 minutes.

Baked pumpkin with apple and prunes

Pumpkin is an excellent base for healthy, tasty and, most importantly, low-calorie desserts. For a light dessert of pumpkin and apples, choose sweet butternut squash and sour apples for a taste contrast.

What you need:

  • pumpkin - 400 g;
  • 4 medium apples;
  • prunes - 100 g;
  • water - 100 ml;
  • spices (cinnamon, cardamom) - to taste;
  • nuts (or pumpkin seeds, roasted sesame seeds) - to taste;
  • honey or maple syrup to taste.

How to cook:

  1. Peel the pumpkin and cut into beautiful slices (if the pumpkin is large, you can cut it into thick bars or large cubes).
  2. Cut apples in half, remove seeds, cut each half into slices. It is not worth peeling off the peel so that the apples do not “melt” during baking.
  3. Put the apple slices and pumpkin, as well as prunes in a baking dish, pour in water, add spices.
  4. Cover the form with foil and bake in an oven preheated to 180°C for half an hour.
  5. Sprinkle the finished dish with chopped nuts and, if necessary, sweeten with honey.
